
I wish we had a better name for this tasty dish. We don’t. But if you like bacon and eggs and hash browns you will want to try this recipe. We take egg and hash browns, wrap them in bacon and cook them in a pie iron. While this is not a fast breakfast, it is a delicious one to enjoy while sitting around the campfire.

Who doesn’t love food cooked over a campfire? Actually, we know a lot of people who don’t and we just have to feel sorry for them. Because we love to cook over a campfire, especially in a pie iron. These are sometimes called camp cookers, pudgy pies, or even hobo pies, but we use the term pie iron. Whatever you choose to call it, know that these trusty tools make extremely delicious food cooked over the campfire.
What we love about Bacon, Egg, & Hash Browns Pie Iron:
- They are wrapped in bacon
- Potatoes at breakfast
- Can add cheese or veggies if you want
The Ingredients for Bacon, Egg, & Hash Browns Pie Iron:
- Bacon (thick or thin cut but thick takes longer to cook)
- Shredded hash browns (not the chunks!)
- Eggs (for a binder)
- Salt and pepper (why not?)
- Onion and garlic powder (for some added oomph)




The Process:
- (Optional) Preheat your pie irons over the fire while getting your ingredients ready.
- The bacon is greasy enough that we don’t spray our pie irons but if you are concerned, go ahead.
- Lay three strips of bacon to cover the inside of a single pie iron.
- Pile hash browns on top of the bacon, enough to snugly fill the closed pie iron.
- Break an egg into the hash browns. We break the yolk of ours to stir down into the hash browns.
- Sprinkle some salt and pepper and some onion and garlic powder over your dish.
- Fold the bacon strips over your egg and hash browns to cover them. This can get messy!
- Carefully close the pie iron and place over the fire, cooking until bacon is done to your liking. This may take longer than you expect but have patience.
- If it sticks when you are trying to remove it from the pie iron, a butter knife can help ease it out.
- Place in bowl or on plate and add additional seasonings as you desire.
Equipment needed:
- Pie iron(s): We have a double pie iron from Rome, a double from Field & Stream, two singles from Field & Stream, and two single Coghlan’s Camp Cookers. Pie irons also come in circles and waffle (which sells out all the time!) versions. We recommend a square or rectangle (for a double) for this recipe. The Field & Stream are no longer available but Rome makes a nice square as well.
- Heat resistant gloves: If you are going to be working around a fire, at some point you will probably get burned. These gloves can help prevent that.
