When was the last time you roasted or grilled your fruit?

We love grilled fruit, and we love foil packets, so we decided to try roasting some fruit in a foil packet to use as a topping over some pound cake. That was good but we felt it could be even better. So, our next step was to toast the pound cake over the fire as well. Why didn’t we try this sooner?

Who doesn’t love food cooked over a campfire? Actually, we know a lot of people who don’t and we just have to feel sorry for them. Because we love to cook over a campfire, especially in foil packets. These are easy to use, easy to customize, and easy to cleanup. Since there are hundreds of recipes out there for things to cook inside a foil pack, you are sure to find something that will be extremely delicious when cooked over the campfire. In this case, roasting fruit inside the foil packet creates a magical dessert.
What we love about Fire Roasted Fruit with Cake:

- No pound cake? Try angel food cake
- If you can’t have a fire, fruit over cake is still tasty
The Ingredients:
- Blueberries (cut in half)
- Strawberries (thinly sliced)
- Sugar (we like vanilla infused)
- pound cake (store bought is fine)
- crème fraiche, whipped cream, ice cream (optional)



Fire Roasted Fruit with Cake Option A Process:
- Start your campfire or heat up your grill so that your heat source is ready. If using wood or charcoal, let the flames die out prior to heating your food.
- Hull the strawberries and slice thinly. Cut your blueberries in half. Cut slices of cake into cubes.
- Sprinkle with sugar and toss lightly.
- Cut six large pieces of foil and six slightly smaller pieces of parchment paper. Place one piece of parchment paper on top of each piece of foil.
- Place one sixth of the fruit mixture on one piece of paper topped foil; continue with the rest of your food.
- Wrap tightly to seal. Place packets on grate over coals.
- After five minutes, flip packets over. Flip twice more for a total of 20 minutes over the heat.
- Carefully pull the packets off and let them cool for a minute or two. Open the seams (watch out for steam!) and let cool.
- (Optional) Top your dessert with crème fraiche, whipped cream, or ice cream if desired.
- Enjoy!

However, for denser cakes such as pound cake you can do this by holding it over the fire on the long end of a s’mores stick or toasting fork. Alternatively, you can use a camp toaster.
- When the cake is toasted, place on plate or tear into pieces and place in a bowl.
- Carefully pull the packets off and let them cool for a minute or two. Open the seams (watch out for steam!) and pour the fruit over your toasted cake.
- (Optional) Top your dessert with crème fraiche, whipped cream, or ice cream if desired.

FAQ and How to Customize:
Q: What other cakes might you suggest?
A: When we are shopping for the trip, we like to see if anything is on sale in the bakery section. We love pound cake, we also think angel food cake is tasty. and our son is always advocating for 7-Up cake. Anything lightly flavored works for us. Chocolate and heavier flavors don’t allow the fruit to shine so we avoid them.
Q: My child is allergic to strawberries. What other fruits are good?
A: While we haven’t tried every fruit out there, we do love pretty much every berry out there. We are also huge fans of the stone fruits such as peaches, plums, and nectarines. I personally would not use apples, banana, or grapes but they might appeal to someone else. Try anything your child likes and see what happens!
Q: You mention toppings…
A: Yes, we did. While the adults enjoy this exactly as is, and the kid will eat it this way, he suggests whipped cream or ice cream as a tasty addition. If we were to top it with anything, we would probably go for crème fraiche which is not something I’m going to take camping. So, we only do that when we are cooking over the fire at home.
General Tips for Cooking in Foil:
- You will definitely want to use heavy duty foil. It only takes one time of losing your food into the fire from cheap aluminum foil to realize it is worth the cost to purchase quality aluminum foil.
- Not everyone feels the need to line their foil with parchment paper, but we prefer to do so. We can’t cook over the fire with paper alone, but we also don’t like to eat food cooked directly in foil.
- Be careful when it comes to opening your foil packet. Steam builds up inside of them, which is good because that is how your food cooks, but you can injure yourself upon opening if you are not careful.
Equipment Needed:
- Cutting board and knife: You will need these to slice your fruit into bite sized pieces.
- Bowl: We want to toss our fruit lightly with some sugar.
- Aluminum Foil: We use heavy duty aluminum foil for all of our foil packet recipes. It only takes one time for your foil to fall apart during the process of cooking to realize the importance of quality foil.
- Parchment Paper: Some people don’t like to cook over high heat with aluminum. Parchment paper is the way to go here. Line the inside of the foil with the paper and everything cooks the same, just without touching the foil. Bonus-the foil stays clean and can be recycled.
- Heat resistant gloves: If you are going to be working around a fire, at some point you will probably get burned. These gloves can help prevent that.
- Pie Irons or S’mores Sticks or Camp Toaster: You want some way to toast your cake if possible. Depending on the density of the cake and what supplies you have, any of the above might work.
