We used to have these individual breakfast casseroles in which an egg, surrounded by hash browns, was baked in a ramekin. I loved those things and realized at some point that it would be fun to try them out camping. Thus, the Pie Iron Egg in a Nest was created and what a tasty recipe it is.

Who doesn’t love food cooked over a campfire? Actually, we know a lot of people who don’t and we just have to feel sorry for them. Because we love to cook over a campfire, especially in a pie iron. These are sometimes called camp cookers, pudgy pies, or even hobo pies, but we use the term pie iron. Whatever you choose to call it, know that these trusty tools make extremely delicious food cooked over the campfire.
What we love about Pie Iron Egg in a Nest:
- Can be spicy or mild
- Eggs cooked to preference
- Potatoes at breakfast
The Ingredients for Pie Iron Egg in a Nest:
- Cooking Spray (don’t want our stuff to stick)
- Shredded hash browns (not the chunks!)
- Bell pepper (enjoy some color, mix and match)
- Onions (we love peppers and onions at breakfast)
- Salt and pepper (why not?)
- Onion and garlic powder (for some added oomph)
- Eggs (for the nest)
The Process:
- (Optional) Preheat your pie irons over the fire while getting your ingredients ready.
- Spray insides of pie irons with cooking spray.
- Mix together hash browns, peppers, onions, and seasonings.
- Place inside pie iron and cook over campfire until potatoes begin to brown.
- Carefully scoop potatoes towards the outside, and crack one egg into the middle of your “nest.”
- Close the pie iron and place back over the fire, cooking until egg is done to your liking.
- Place in bowl or on plate and add additional seasonings as you desire.
Equipment needed:
- Bowl and fork: We need a way to stir any seasonings into our hash browns.
- Pie iron(s): We have a double pie iron from Rome, a double from Field & Stream, two singles from Field & Stream, and two single Coghlan’s Camp Cookers. Pie irons also come in circles and waffle versions. We recommend a square or rectangle (for a double) for this recipe. The Field & Stream are no longer available but Rome makes a nice square as well.
- Heat resistant gloves: If you are going to be working around a fire, at some point you will probably get burned. These gloves can help prevent that.

- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 large egg
- salt and pepper to taste
Instructions
