(Optional) Preheat your cast iron skillet over the camp stove while getting your ingredients ready.
If any of your ingredients will be better cooked first (bacon, onion, etc.) go ahead and do that.
In a large bowl, whisk together your eggs, milk, salt, and pepper.
Stir in the hash browns, cheese, and any additional ingredients. (We typically include precooked bacon to make our kid happy.) Mix thoroughly.
Spray your skillet with nonstick cooking spray if you are not confident in your skillet’s seasoning.
Dump your hash brown mixture into the skillet and spread it evenly. Cover with the lid.
Bake until the edges are crispy, about 30-35 minutes.
Place in bowl or on plate and add additional seasonings as you desire.
Divide your Hash Brown Pie into as many servings as you need.
Provide toppings for your hungry eaters. We enjoy sour cream, salsa, chili, you name it.
