Mandarin Orange Chicken Couscous Salad

Ingredients

  • 5.6 oz package couscous mix with toasted pine nuts
  • 11 oz can mandarin oranges in light syrup
  • 6 oz grilled chicken strips
  • 1 small zucchini diced (about 3/4 cup)
  • 2 tbsp sliced almonds toasted
  • 1/4 tsp salt
  • 1/4 tsp fresh ground pepper

Instructions

  • Prepare couscous according to package directions and transfer to a large bowl.
  • Fluff with a fork.
  • Drain your oranges, reserving 1/4 C. syrup.
  • Combine couscous, syrup, chicken, zucchini, almonds, salt, and pepper; toss well.
  • Add oranges and reserved juice, toss gently.
