Mandarin Orange Chicken Couscous Salad

- 5.6 oz package couscous mix with toasted pine nuts
- 11 oz can mandarin oranges in light syrup
- 6 oz grilled chicken strips
- 1 small zucchini diced (about 3/4 cup)
- 2 tbsp sliced almonds toasted
- 1/4 tsp salt
- 1/4 tsp fresh ground pepper
Prepare couscous according to package directions and transfer to a large bowl.
Fluff with a fork.
Drain your oranges, reserving 1/4 C. syrup.
Combine couscous, syrup, chicken, zucchini, almonds, salt, and pepper; toss well.
Add oranges and reserved juice, toss gently.
