Servings: 1 pocket
- 3 slices bacon thin or thick cut
- 1/2 cup shredded hash browns frozen
- 1 egg
- salt and pepper to taste
- garlic and onion powders to taste
(Optional) Preheat your pie irons over the fire while getting your ingredients ready.
The bacon is greasy enough that we don’t spray our pie irons but if you are concerned, go ahead.
Lay three strips of bacon to cover the inside of a single pie iron.
Pile hash browns on top of the bacon, enough to snugly fill the closed pie iron.
Break an egg into the hash browns. We break the yolk of ours to stir down into the hash browns.
Sprinkle some salt and pepper and some onion and garlic powder over your dish.
Fold the bacon strips over your egg and hash browns to cover them. This can get messy!
Carefully close the pie iron and place over the fire, cooking until bacon is done to your liking. This may take longer than you expect but have patience.
If it sticks when you are trying to remove it from the pie iron, a butter knife can help ease it out.
Place in bowl or on plate and add additional seasonings as you desire.
