Equipment

  • Pie Irons

Ingredients

  • 3 slices bacon thin or thick cut
  • 1/2 cup shredded hash browns frozen
  • 1 egg
  • salt and pepper to taste
  • garlic and onion powders to taste

Instructions

  • (Optional) Preheat your pie irons over the fire while getting your ingredients ready.
  • The bacon is greasy enough that we don’t spray our pie irons but if you are concerned, go ahead.
  • Lay three strips of bacon to cover the inside of a single pie iron.
  • Pile hash browns on top of the bacon, enough to snugly fill the closed pie iron.
  • Break an egg into the hash browns. We break the yolk of ours to stir down into the hash browns.
  • Sprinkle some salt and pepper and some onion and garlic powder over your dish.
  • Fold the bacon strips over your egg and hash browns to cover them. This can get messy!
  • Carefully close the pie iron and place over the fire, cooking until bacon is done to your liking. This may take longer than you expect but have patience.
  • If it sticks when you are trying to remove it from the pie iron, a butter knife can help ease it out.
  • Place in bowl or on plate and add additional seasonings as you desire.
