A long time ago, back when I lived in Los Angeles for school, there was a diner we would go to for breakfast when my parents came to town. They would do a stuffed French toast that my father and I loved to order. One day we were reminiscing over these days and I thought…I could make that in a pie iron! Why did I think about making French toast in a pie iron? Because this time of year I’m constantly thinking about cooking over the campfire!
While this takes a bit more time to put together than some of our other camping breakfasts, we like to serve this with Stuffed Hash Browns, also made in the pie iron. The nice thing about making meals in the pie iron is that we can customize each dish to the eater’s taste. And when you have a picky eater child, this is a saving grace.

Who doesn’t love food cooked over a campfire? Actually, we know a lot of people who don’t and we just have to feel sorry for them. Because we love to cook over a campfire, especially in a pie iron. These are sometimes called camp cookers, pudgy pies, or even hobo pies, but we use the term pie iron. Whatever you choose to call it, know that these trusty tools make extremely delicious food cooked over the campfire.

The Ingredients for Cream Cheese French Toast in a Pie Iron:
- Cooking spray (helps the sandwich to not stick)
- Slices of bread (we tend to use a cinnamon swirl bread for extra flavor)
- Cream cheese (I love to use a flavored one, sweet – not savory)
- Egg (for the batter)
- Milk (for the batter)
- Vanilla (for the batter)
- Cinnamon (optional)
- Fresh fruit (optional)
The Process to make Pie Iron Cream Cheese French Toast:
- (Optional) Preheat your pie irons over the fire while getting your supplies ready.
- Place your slices of bread on a clean surface and spread cream cheese along one side of one piece of bread.
- If you are adding berries to the sandwich, place them on the cream cheese.
- Take your other slice of bread and made your sandwich.
- Crack your egg into your bowl. Add your milk, vanilla, and cinnamon if using. Whisk these together.
- Spray the insides of your pie irons.
- Place your sandwich into your egg batter, then flip it over, so that both sides are covered.
- Remove the sandwich and place it inside the pie iron.
- Carefully close your cooker, making sure to latch it.
- Continue with your remaining ingredients to create additional sandwiches, if necessary.
- Cook over your fire, turning frequently, until the French toast has been browned to your satisfaction.
- Serve with extra berries if available.
Equipment needed:
- Pie iron(s): We have a double pie iron from Rome, a double from Field & Stream, two singles from Field & Stream, and two single Coghlan’s Camp Cookers. Pie irons also come in circles and waffle versions. We recommend a square or rectangle for this recipe. The Field & Stream are no longer available but Rome makes a nice square as well.
- Cutting board and knife: You need a clean surface on which to place your bread and something for spreading the cream cheese.
- Bowl and fork: For whisking your egg, milk, vanilla, and cinnamon (if using). It will need to be large enough to the sandwich. We use a rectangular piece of plastic ware.
- Heat resistant gloves: If you are going to be working around a fire, at some point you will probably get burned. These gloves can help prevent that.
