We first used hash browns in the pie iron when we started making Egg in a Nests. One camping trip we had extra hash browns and needed to do something with them. Instead of making more of the same, we took inventory of what we had sitting around to cook with. Our single pie irons were busy making Cream Cheese French Toast but our double pie irons were available. We had plenty of cheese available because I always pack cheese when we are camping. There was leftover peppers and onions. Plus, we had an avocado and some tomato. Enter the Stuffed Hash Browns Pie Iron Concoction.
As it turns out, we did not invent this recipe. We have been making variations of these for years on the stovetop at home. And we have seen similar recipes on many other websites. But then we started doing them over the campfire and we love them. Now we make them pretty much every time we do the Cream Cheese French Toast.

Who doesn’t love food cooked over a campfire? Actually, we know a lot of people who don’t and we just have to feel sorry for them. Because we love to cook over a campfire, especially in a pie iron. These are sometimes called camp cookers, pudgy pies, or even hobo pies, but we use the term pie iron. Whatever you choose to call it, know that these trusty tools make extremely delicious food cooked over the campfire.
What we love about Stuffed Hash Browns in the Pie Iron:

- Great use of leftovers
- Good for any meal
The Ingredients for Pie Iron Stuffed Hash Browns:
- Cooking spray (don’t want those hash browns to stick)
- Hash browns (because that is what we are cooking)
- Cheese (because cheese makes most things better)
- Salt and pepper (to taste)
- Avocado and/or Tomato and/or Onions and/or Peppers (optional)
- Precooked breakfast meats (optional)
The Process:
- (Optional) Preheat your pie irons over the fire while getting your supplies ready.
- Spray the insides of your pie irons.
- Fill one half with hash browns, packing them tightly.
- Add cheese and other optional ingredients on top of hash browns.
- Sprinkle with seasonings.
- Cover with more hash browns, mounding them slightly. You want the pie iron to be full once closed, with contact on both sides. And hash browns will cook down as they bake.
- Carefully close your cooker, making sure to latch it.
- Cook over your fire, turning frequently, until the cheese is melted, and the hash browns are cooked through.
Equipment needed:
- Pie iron(s): We have a double pie iron from Rome, a double from Field & Stream, two singles from Field & Stream, and two single Coghlan’s Camp Cookers. Pie irons also come in circles and waffle versions. We recommend a square or rectangle for this recipe. The Field & Stream are no longer available but Rome makes a nice square as well.
- Cutting board and knife: You need a clean surface on which to slice your tomato and avocado if you are using.
- Heat resistant gloves: If you are going to be working around a fire, at some point you will probably get burned. These gloves can help prevent that.
